Sparkling wine Can Sumoi, “Ancestral” Montonega, 2021

Can Sumoi, “Ancestral” Montonega is an elegant extra brut white sparkling wine made from Montonega grapes, a clone of Parellada with a pinkish skin. Vineyards that practice organic and biodynamic methods are located in the Catalonia region on limestone soils at an altitude of 600 m above sea level. The average age of the vines is 2045 years. Harvesting is done by hand, the berries are carefully selected and sorted, then subjected to delicate pressing in a pneumatic press. Spontaneous alcoholic fermentation takes place in stainless steel vats, after which the unfermented wine is bottled, where fermentation is completed. The wine is aged in bottles for at least 12 months. Vinification processes take place without pasting, filtration and adding sulfur dioxide.
