Sparkling wine Salomon, Brut Nature Rose, 2018

Salomon, Brut Nature Rose is an aged sparkling wine made from Zweigelt grapes grown in terraced vineyards outside the historic center of Krems. It is dominated by a continental climate with warm summers, cold winters and noticeable fluctuations in day and night temperatures, which allows the grapes to develop a rich aroma while maintaining crisp acidity. The grapes are harvested exclusively by hand during the first week of September. At the winery, the grapes are macerated for 3 hours to obtain a beautiful pink color, then the juice is separated from the pulp by soft pressing. The resulting juice is decanted within 48 hours. Fermentation takes place in stainless steel tanks at a controlled temperature of 18 C. Bottling takes place in December, after which secondary fermentation is initiated according to the classical method. Excerpt on fine lees lasts 18 months.
