For the production of white semi-dry wine Antiche Terre Venete, Soave DOC used grapes varieties Garganega, Trebbiano and Chardonnay. After harvesting and sorting, the berries are pressed, followed by a short pre-fermentation cold maceration. Fermentation takes place at a controlled temperature of 14-16 C for 8-10 days. The wine is aged for a short time in stainless steel vats.
