Wine Cembra Cantina di Montagna, “Vigna Cancor”, Riesling, Trentino DOC, 2017

Cembra Cantina di Montagna, Sauvignon, Trentino DOC – an exquisite dry white wine made from Sauvignon grapes, which is grown in the company’s vineyards in one of the most famous and prestigious wine-growing zones of Italy – Trentino. The soils are mostly calcareous, in the Chembre valley, where Sauvignon Blanc is grown, porphyry prevails. The climate is cool, with noticeable fluctuations in day and night temperatures, cold winters and hot summers. Vineyards are located at an altitude of 300-400 meters above sea level with eastern, southern and western exposure. The vines are processed according to the Guyot system. Harvested after the berries have reached optimum ripeness manually in the third decade of September from vineyards located in some particularly suitable microregions of the Chembre valley, in which high daily temperature fluctuations allow preserving unique aromatic properties. At the winery, the berries are gently pressed in an inert atmosphere. This is followed by static wort decantation and fermentation in stainless steel tanks at a strictly controlled temperature. The wine is aged on the lees for 4-5 months before bottling.
