The name of the wine “Con Vento” in Italian means “the wind” as the vineyards of Castello del Terrichchio constantly covered by the sea breeze. Two yellow zigzag lines on the label symbolize the movement of wheat, leaning in the wind. Sauvignon blanc for “Con Vento” landed in the south and south-west of the region, at an altitude of 100 meters above sea level. Planting density is 5,500 vines per hectare. 2009 harvest was collected in September. Grapes underwent a 24-hour kriomatseratsii on the skin (dry ice) and a gentle pressing to extract the quintessence of the best qualities of the variety. Fermentation was carried out in stainless steel vats at a controlled temperature of 16 C. First wine yeast extract with constant agitation lasted for six weeks, followed by six months in stainless steel tanks. Wine bottled in April 2010. In 2009, 9,000 bottles were produced “Con Vento”.
Castello del Terrichchio in the production of their wines with a noble but difficult goal: the production of “Supertuscan” quality wines in limited quantities. That restriction yields per vine when removed only about 900 grams of grapes, allows to create rich economy and concentrated wine with a high content of polyphenols, well-structured and capable of long aging.
