Wine De Stefani, “Olmera”, Veneto IGT, 2020

Dry white wine Olmera Bianco is made from a combination of grape varieties Sauvignon and Tokai. Tokaj wine gives fullness and structure, and Sauvignon gives flavor and elegance. The vines grow in areas where there used to be “olmera” (translated from the local dialect – “Elm wood”). This area has always been considered an ideal place for viticulture and wine produced here are sketchy and rich taste. In the deep layers of clay soil remains of ancient elms forests, this makes it possible to obtain a wine with good character, a scoop taste, excellent structure and body. Crop harvested in the second half of September. After destemming and soft pressing berries are fermented in barriques at a controlled temperature. Wine “rest” for 12 months in barriques and then spends another 6 months in stainless steel tanks in contact with the sediment to flavor wine maximum harmony and completeness.
