Do.TE, “sYR.up” is an incredibly fresh, crisp dry red wine made from Syrah grapes. The grapes are harvested by hand in August. Whole bunch fermentation and carbonic maceration take place in wooden barrels. The wine is aged in one 7 hectoliter concrete vat and three old wooden barrels for 5 months. After that, the wine is bottled without clarification or filtration and matures in the cellars of the winery for another 4 months.
