“Venetie Domini” – a top of the range wines of Valpolicella Negrar cooperative – the largest landowner in the territory of the Valpolicella Classico. Domini Veneti – the result of a long-term project for the allocation of the best plots cru, lower yields on them and thereby improve the quality of wines. Name “Domini Veneti” recalls the time when the land was part of the Valpolicella powerful Venetian Republic.
Valpolicella Classico Superiore wine expresses the typical and traditional style of Valpolicella with good structure and lovely fragrant bouquet. Grape wine is grown in the Valpolicella Classico heart on Mount Negrar, at an altitude of 100 to 350 meters above sea level. The average age of the vines is 15-25 years. Harvested by hand in early October. After crushing and grinding passes grape fermentation at a temperature between 25 and 28 C in maceration for 6 days with manual compression of three times per day. After malolactic fermentation the wine is aged in the bottle for 6 months. Ageing potential Valpolicella Classico Superiore wine – up to 6 years under the observation of storage conditions (in the dark at a constant temperature of not higher than 14-15 C by placing the bottle horizontally). Serve wine recommended, cooled to 17 C and uncork the bottle an hour before serving.
Winery Cantina Valpolicella Negrar was organized in 1933 from several small manufacturers uncompetitive. Today Cantina Negrar – an association of 180 winegrowers, one of the largest wine-producing cooperatives in Italy. They advise and coordinate the activities of about 200 owners of vineyards, whose total area is 500 hectares. Old recipes combined with modern innovations that are used with great caution and care – a guarantee of high quality. All the vineyards are located on the slopes of the hills of Valpolicella Classico region north-west of Verona. Annual production capacity now stands at over 8 million bottles of wine produced from more than 60,000 quintals (13 million. Pounds) of grapes.
