Wine Fabio Motta, “Pievi”, Bolgheri DOC, 2022

“Pievi” Rosso is a dry red wine with an excellent balance between alcohol and other components of aromatic taste. It was with this wine that the experience of winemaker Fabio Motta was born. It is here that Fabio finds all the characteristics of his beloved Bolgheri – especially the clean, soft and juicy fruit notes. Much space in the Motto wine blend is given to Tuscan Sangiovese, which gives the Pievi complexity and, at the same time, lightness.
The grapes, harvested at full ripeness, undergo a two-week fermentation with natural yeast in truncated-conical vats with a volume of thirty centners. The head of the wort is immersed manually during fermentation. The wines of each variety are then individually placed in second and third use barriques for malolactic fermentation. The three wines are harvested approximately three months after harvest. The final blend matures in oak barrels for a year and is bottled without filtration or clarification.
