Wine Fattoria Fibbiano, “Sofia” Rose, Toscana IGT, 2018

Light and crisp dry wine Fattoria Fibbiano, “Sofia” Rose made from Sangiovese grapes grown in the region Toscana IGT on sandy soils with good structure. Optimal ripeness usually reach in the first half of September. Crop is harvested by hand in the cool of the day. Grapes are carefully sorted and gently pressed. The wort is placed in stainless steel tanks, where for 12 hours is performed maceration. After its completion, cooled to a temperature of 8 C wine material is placed in a steel container for alcoholic fermentation at a controlled temperature not exceeding 22 C. Upon completion of the fermentation liquor is maintained for several months in the steel at a temperature of 10 C to maximize the preservation of wine natural fresh aroma and flavor of grape.
