Wine Filippi, “Monteseroni” Soave Colli Scaligeri DOC, 2019

Filippi, “Castelcerino” Soave Colli Scaligeri DOC – dry white wine from Garganega grapes grown in the company’s vineyards in Soave. “Castelcherino” is the name of the native village of Filippi and the vineyard that surrounds his estate. Vineyard “Castelcerino” has a southeastern exposure, it is located at an altitude of 290-400 meters above sea level, this is the highest area in Soave. The soils are predominantly basaltic and volcanic. The age of the vines ranges from 40 to 70 years. The grapes are harvested by hand when the berries reach optimum ripeness. After soft pressing, the wort is fermented in steel tanks with a volume of 100 liters using wild yeast at a controlled temperature. This is followed by prolonged contact with the sediment, in the winter months, batonage is used. Malolactic fermentation is allowed. After settling at low temperatures, the wine is bottled without filtration.
