Wine Lavacchio, “Cedro” Chianti Rufina DOCG Riserva, 2017

“Cedro” Chianti Rufina Riserva is a wine of great complexity and perfect balance, which was created not only by wine growers and winemakers, but also by time. Grapes for wine making are of noble origin and highest quality. Old vines give small harvests with a concentrated taste, with one vine receiving no more than a kilo of berries. Harvest is collected in mid-October. After separation from the crests, the fruits are carefully pressed. Fermentation and maceration take place in steel tanks at a controlled temperature for 20 days. The wine is aged 24 months in barrels of French oak and concrete vats, then 18 months in French oak barrels and 18 months in 35-hectolitre barrels. After bottling the “Chedra”, Riserva ripens for at least six months. The potential of wine storage is very long and is at least 18 years.
Vintage 2008 won the gold medal at the “Mundus Vini”.
