Grapes for unusual and fine wine “Morandina” Ripasso grown on plots located in areas Mezzane Tregnago and at an altitude of 450 meters above sea level and with south-east exposure. The soils here – glacial, planting density – 7,000 vines per hectare. Grapes harvested in mid-October, berries are separated from the stems, pressed and subjected to fermentation and maceration for 15 days in the vertical tanks. This is followed by delestazh and fermentation in oak vats. Then the wort is mixed with the skins of grapes used for the production of Amarone. Repeated maceration is carried out for five days at a temperature of 25-30 C, after which the wine is fermented again. Then hold holding for 18 months – partly in barriques and partly in oak vats. After bottling the wine matures in bottles for another six months.
