“Helichrysum” Brunello di Montalcino DOCG is an elegant and rich red wine made from Sangiovese grapes that only improves with age. Its name comes from the aromatic wild herb “Immortelle”.
The grapes for this wine are harvested from the highest points of the San Polino plots, more precisely from the vineyards with a southerly orientation at an altitude of 450 meters above sea level. The soils of the plots are a mixture of sandy loam and volcanic soil with veins of marl. In 2015 The year saw an early spring with many bright and sunny days alternating with rainy ones (at least 7 days), which had a positive effect on the moisture reserves in the soil. Summer began early, hot weather lasted until the end of September. Timely rains brought relief to the vines, giving them strength before the harvest. This had a positive effect on the quality of the grapes. Fermentation took place spontaneously with wild yeast in oak barrels. Maceration before fermentation took 3 days at a temperature of 12 C, post-fermentation maceration lasted 40 days. The wine spends 6 months in French oak barriques and 3 years in large barrels of Slavonian and French oak. The total circulation is 3,000 bottles.
