Wine Santi, “Solane” Ripasso Valpolicella Classico Superiore DOC, 2020

“Solane” Ripasso Valpolicella Classico Superiore DOC from the company Santi made on a “Ripasso” – refermentatsiya to squeeze the grapes used to make Amarone, which allows to enrich the taste and texture of the wine, add tannins and complementary shades in its bouquet. The name of the wine comes from the word “solane”, the so-called space without a ceiling, in which there are racks for drying grapes for Amarone.

After hand-picking of grapes for wine “Solana” in early October, part of the grapes are dried, and for the rest of maceration begins within 15 days. In November of the wort passes refermentatsiyu on the old method of “Ripasso”. Wine is aged for several months in barriques and then in large oak barrels for 15 months.

Santi winery was founded in 1843 when Attilio Carlo Santi began production of the classic wines of Soave, Valpolichela, Recioto, Amarone and Bardolino from grapes grown in the region’s top vineyards in the valley of Illasi, situated among the mountains Lessini. Own vineyards, wineries extend over 70 hectares, including 40 hectares located in the Valpolicella Classico, and the rest – in Bardolino Classico Soave Classico.
