“Ripaltella” Chianti Superiore DOCG – fresh, very pleasant wine that combines complexity and finesse for every day. For its production, Sangiovese grapes are used, which is grown in Bucina, in the province of Arezzo. The vineyards are located at an altitude of 400 meters above sea level, have a southern exposure and well-drained soils. The grapes are harvested by hand when the berries reach optimum ripeness. At the winery, after destemming and pressing, fermentation is carried out in cone-shaped vats at a controlled temperature of 27 C for 7-10 days. Post-fermentation maceration lasts 8-10 days. Then the wine is aged in large oak barrels for 18 months and another 3 months – in bottles after bottling. The wine goes well with red meat dishes, meat with sauces, fish, pizza and cheeses.
