Wine Waterkloof, “Circumstance” Cabernet Franc, 2019

To create red dry wine “Circle of Life” Red, the producer used Syrah, Petit Verdot and Merlot grapes. The winter of 2014 was cold and stingy with rain. Buds opened at the beginning of the growing season due to a sharp increase in air temperature. Spring was dry until the beginning of the summer season. During the period of extremely high temperatures and constant solstice, the berries received significant burns. Such weather conditions have affected the reduction in the amount of crop. Fortunately, soon the air temperature dropped and kept at a stable, favorable level until the beginning of the harvest. Grapes ripen evenly. Charges held manually two weeks later than usual. After that, the berries were transported to the winery and also sorted by hand. Some of the grapes were fermented with whole bunches, and the other part was pre-ground. Malolactic fermentation was carried out with the addition of local yeast. Maceration on the skin and fermentation lasted about 30 days. Excerpt wine held in oak barrels of 600 and 225 liters, 20% of which were new.
