William Downie, Pinot Noir, Gippsland – dry red wine with a complex berry-fruity aroma from Pinot Noir grapes harvested from the Matthews vineyard in Berrys Creek in South Gippsland (50%) and William Downey’s own vineyards in Baw Baw Shire (50 %). Vineyard “Matthews” was planted in red volcanic soil in 1998. It is a cool and humid place where vines grow with dense, lush crowns. While “Matthews” fruits exhibit aromas of red earth and dark fruits, the Baw Baw Shire harvest provides structure, weight and complexity to the future wine. Hand-picked grapes are also hand-sorted. The grapes are not crushed, but vinified with whole berries, which, under the influence of gravity, fall into open vats made of wood and stainless steel. Spontaneous fermentation takes place under the influence of wild yeast without temperature control for 30 days. Then the juice is separated from the mash by gentle pressing. Extract of wine takes place in French oak barrels, 20% of which are new. Wine is bottled without preliminary purification and filtration.
