Wine Yarra Yering, Dry Red No. 2 is based on the Shiraz variety and is made in the style of the French Rhone Valley. The addition of Mataro and the co-fermentation with the white Viognier and Marsanne grapes enhances the Shiraz character, providing complexity, richness and generosity.
The grapes are harvested by hand in the cool of the morning, sorted and ground directly into the traditional half-ton Yarra Yering “fermentation teapot”. In 2/3 of the fermenters, stems were added to give structure and aroma to the wine. Fermentation starts naturally, but selected cultured yeast strains are added during the fermentation process to complete it. After that, the pulp is pressed, and the resulting wine is aged for 21 months in French oak barriques (half of which are new, half are two years old).
