“Harlequin” – a unique wine that has no analogues in the world, which is produced only by a very good harvest. The blend consists of 15 wine grape varieties. And, despite the fact that the wine is considered to be red in his assemblyazhe there are four white grape varieties: Sauvignon Blanc, Chardonnay, Garganega and Trebbiano Toscano. Red grapes are presented as autochthonous and international varieties: Cabernet Sauvignon, Corwin, Korvinone, Rondinella, Oseleta, Teroldego, Cabernet Franc, Merlot, Syrah, Sangiovese and Martsemino. All varieties are grown in Verona on organic vineyards. The grapes for making wine, “Harlequin” personally selected chief winemaker and very carefully, cluster by cluster, is removed from the vines by hand, after which some varieties are dried on trays in the wild within 40 days. After fermentation and malolactic fermentation the wine is aged 30 months in new French oak barrels, is bottled without clarification and undergoes further maturation has, at least 2 years.

From ancient Greek name of the winery “Zyme” translates as “yeast”, while the company logo in the form of a pentagon represents the five key aspects of winemaking: man vine, earth, sun and water. The founder of the winery is Celestino Gaspari, who officially began wine production in 2003, although his interest in winemaking woke up in early childhood. The turning point in the fate of Celestino Gaspari was his acquaintance with the future father – a famous winemaker Giuseppe Quintarelli. It is the future owner of the winery Quintarelli “jima” to gain valuable knowledge and experience that helped him set up their own production in the heart of the Valpolicella Classico. Today the winery “jima” consists of two units: a modern building, in which the process of vinification and wine cellar carved into the wall of sandstone. There winemakers use their magic, creating wines that are gaining popularity around the world.
